LAUGHLIN, NV – March 14, 2014 – Aquarius Casino Resort is offering special dining menus for Easter with a four-course feast at The Vineyard Ristorante and special offerings from Windows on the River Buffet on Sunday, April 20, 2014.
Aquarius will also feature a beer and cocktail drink special at all of its bars throughout the month of April.
“We want guests to enjoy Easter with their families and friends and leave the cooking to us,” said Aquarius Casino Resort General Manager Sean Hammond. “Our chefs have delicious menus planned featuring all the traditional holiday favorites and a few special surprises.”

Chef Doyle at The Vineyard Ristorante is preparing an extraordinary Easter menu on Sunday, April 20 that offers guests a spectacular meal to match the high-end Italian restaurant’s spectacular Colorado River view.
The meal begins with an appetizer of bacon wrapped shrimp served with chipotle remoulade, followed by choice of white bean soup or mixed field greens salad with Asiago dressing. Guests may choose their entrée: Bronzed Sablefish, which is pan seared and oven finished black cod, served with herb crusted mushroom risotto and seasoned vegetables; or Rosemary Garlic Lamb, which is roasted lamb with roasted garlic and herbs, served with twice baked polenta and seasoned vegetables.
For dessert, guests will have their choice of wild berry Grand Marnier torte or white chocolate raspberry torte.

Windows on the River Buffet
Offering excellent food and friendly service in a casual dining experience, Windows on the River Buffet is celebrating Easter with an amazing champagne brunch.
The special brunch will include an omelet and waffle station for made-to-order custom omelets and waffles, as well as a carving station featuring herb crusted pork and roasted baron of beef. Guests can also enjoy a wide variety of brunch items including eggs benedict, sausage patties, scrambled eggs, chorizo and eggs, bacon, and southwestern strata.
Other special items will include honey cilantro lime chicken, Seafood Newburg, fried shrimp, blackened catfish, Hungarian goulash, Italian sausage with peppers & onions, and tortellini carbonara.
In addition to the standard delicious desserts offered at Windows on the River Buffet, Easter guests will find Wild Berry Trifle, Peach Melba cobbler, and Mandarin Berry Torte.
